Steakhouse Loaded Potato Skins

Ingredients

  • 4 medium russet potatoes, scrubbed clean
  • 2 tablespoons olive oil
  • 3 tablespoons butter, melted
  • 1 1/2 teaspoons Black Forge No. 4 Forged Steakhouse Blend
  • 1 cup shredded sharp cheddar cheese
  • 6 slices cooked bacon, chopped
  • 1/3 cup sour cream
  • 2 tablespoons sliced green onion or chives
  • Optional: 1/2 cup chopped cooked steak, burger crumbles, or sautéed mushrooms
  • Optional: extra black pepper, ranch, or a small drizzle of steak sauce

Directions

  1. Preheat oven to 425°F. Pierce the potatoes a few times with a fork, rub with olive oil, and place on a baking sheet.
  2. Bake for 45 to 55 minutes, or until the potatoes are tender when pierced with a knife. Let cool until safe to handle.
  3. Cut each potato in half lengthwise. Scoop out the center, leaving about 1/4 inch of potato inside each skin so they hold their shape.
  4. In a small bowl, stir together the melted butter and Black Forge No. 4.
  5. Brush the seasoned butter over the inside and outside of each potato skin.
  6. Place the potato skins cut-side up on the baking sheet. Bake for 10 minutes to crisp the edges.
  7. Fill each potato skin with cheddar cheese, chopped bacon, and optional steak, burger crumbles, or mushrooms if using.
  8. Return to the oven for 8 to 10 minutes, or until the cheese is melted and bubbly.
  9. Top with sour cream, green onion or chives, and a tiny extra pinch of Black Forge No. 4 if desired.
  10. Serve warm while the edges are crisp and the cheese is melty.

Salt Spring Tip

Brush the skins with Black Forge butter before crisping and again lightly before filling if you want deeper steakhouse flavor. The blend gives the edges a dark, smoky, savory finish without making them taste burnt.

Easy Swaps

Use pre-baked potatoes to make this faster. You can also microwave the potatoes first, then finish them in the oven to crisp the skins.

For a meatless version, skip the bacon and add sautéed mushrooms, caramelized onions, or roasted broccoli. For a heartier dinner version, add chopped steak, seasoned ground beef, or leftover burger crumbles before melting the cheese.

What To Serve With Them

Serve these loaded potato skins with burgers, steak bites, grilled chicken, salad, chili, roasted vegetables, or as a snack board with ranch, sour cream, and extra bacon on the side.

Storage And Reheating

Store leftover potato skins in an airtight container in the fridge for up to 3 days.

Reheat in the oven or air fryer at 375°F until warm and crisp. Avoid microwaving if possible, because the skins will soften.
