Ingredients
- 1 1/2 pounds steak tips or sirloin steak, cut into bite-size pieces
- 1 large onion, sliced
- 1 1/2 tablespoons olive oil
- 1 tablespoon butter
- 1 1/2 to 2 teaspoons Black Forge No. 4
- 1 teaspoon Worcestershire sauce, optional
- 1 teaspoon garlic oil or a small drizzle of olive oil, optional
- Optional: fresh parsley, cracked pepper, or sautéed mushrooms for serving
Directions
- Pat steak tips dry with paper towels so they sear instead of steam.
- Season steak with Black Forge No. 4 and a small drizzle of olive oil or garlic oil if using.
- Heat a cast iron skillet over medium-high heat until hot.
- Add olive oil, then sear the steak tips in a single layer for 2–3 minutes per side, working in batches if needed.
- Remove steak from the skillet and set aside.
- Add sliced onions to the same pan and cook until browned, softened, and charred at the edges.
- Add butter and Worcestershire sauce if using, then return the steak tips to the pan.
- Toss everything together for 1–2 minutes until glossy and warmed through.
- Rest for a few minutes, then serve warm.
Salt Spring Tip
The secret is a hot pan and dry steak. Give the steak space in the skillet so it can form that dark crust. If the pan is crowded, the steak will steam instead of sear.
