Canal Side Garlic Butter Chicken Bites

These garlic butter chicken bites are golden, juicy, and coated in a simple skillet sauce that tastes like comfort food without taking all night. Canal Side No. 1 brings the garlic, herbs, and Syracuse salt right into the chicken and butter so every bite has that warm, savory finish.

Ingredients

  • 1 1/2 pounds boneless chicken breasts or thighs, cut into bite-size pieces
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 1 1/2 to 2 teaspoons Canal Side No. 1
  • 2 cloves garlic, minced, optional
  • 1 tablespoon lemon juice, optional
  • 1 tablespoon grated parmesan, optional
  • Optional: fresh parsley for light garnish

Directions

  1. Pat chicken pieces dry with paper towels so they brown well.
  2. Season chicken with Canal Side No. 1 and toss to coat evenly.
  3. Heat olive oil in a large skillet over medium-high heat.
  4. Add chicken in a single layer and cook for 3–4 minutes without moving too much, so the edges can brown.
  5. Flip and continue cooking until the chicken is golden and cooked through.
  6. Lower heat to medium and add butter and garlic if using.
  7. Stir until the butter melts and coats the chicken in a glossy garlic-herb sauce.
  8. Add lemon juice or parmesan if desired, then toss once more.
  9. Finish with a light parsley garnish and serve warm.

Salt Spring Tip

Give the chicken space in the skillet. If the pan is crowded, the chicken will steam instead of getting those golden browned edges. Cook in batches if needed, then toss everything together in the garlic butter at the end.
