Ingredients
- 4 thin chicken cutlets
- 1 cup Italian-style breadcrumbs
- 1/3 cup grated parmesan
- 1 to 2 teaspoons Canal Side No. 1
- 1/2 cup flour
- 2 eggs, beaten
- 2 cups cherry tomatoes
- 1 ball burrata, torn into pieces
- Olive oil, for cooking
- Optional: fresh basil, parsley, or a drizzle of balsamic glaze
Directions
- Pat the chicken cutlets dry.
- Set up three shallow bowls: one with flour, one with beaten eggs, and one with breadcrumbs, parmesan, and Canal Side No. 1.
- Dredge each cutlet in flour, dip into egg, then coat with the breadcrumb mixture.
- Heat olive oil in a skillet over medium heat.
- Cook the chicken cutlets for 3β4 minutes per side, or until golden, crispy, and cooked through.
- Remove the cutlets and set aside on a plate.
- In the same skillet, add the cherry tomatoes and cook until they soften and blister, about 4β6 minutes.
- Plate the chicken cutlets with the blistered tomatoes and torn burrata on top.
- Finish with fresh herbs and an extra light sprinkle of Canal Side No. 1 if desired.
