Chicken Cutlets with Blistered Tomatoes & Burrata

Golden, crispy chicken cutlets meet warm blistered tomatoes and creamy torn burrata for a dinner that feels fresh, cozy, and a little restaurant-worthy. Canal Side No. 1 brings the garlic-herb finish that ties everything together without making the recipe complicated.

Ingredients

  • 4 thin chicken cutlets
  • 1 cup Italian-style breadcrumbs
  • 1/3 cup grated parmesan
  • 1 to 2 teaspoons Canal Side No. 1
  • 1/2 cup flour
  • 2 eggs, beaten
  • 2 cups cherry tomatoes
  • 1 ball burrata, torn into pieces
  • Olive oil, for cooking
  • Optional: fresh basil, parsley, or a drizzle of balsamic glaze

Directions

  1. Pat the chicken cutlets dry.
  2. Set up three shallow bowls: one with flour, one with beaten eggs, and one with breadcrumbs, parmesan, and Canal Side No. 1.
  3. Dredge each cutlet in flour, dip into egg, then coat with the breadcrumb mixture.
  4. Heat olive oil in a skillet over medium heat.
  5. Cook the chicken cutlets for 3–4 minutes per side, or until golden, crispy, and cooked through.
  6. Remove the cutlets and set aside on a plate.
  7. In the same skillet, add the cherry tomatoes and cook until they soften and blister, about 4–6 minutes.
  8. Plate the chicken cutlets with the blistered tomatoes and torn burrata on top.
  9. Finish with fresh herbs and an extra light sprinkle of Canal Side No. 1 if desired.
