Cherrywood smoke, maple warmth, and savory depth make Iron Pier No. 2 a natural match for potatoes, sausage, eggs, bacon, breakfast skillets, and cozy weekend meals.
Ingredients
Breakfast Hash
- 3 cups diced potatoes, fresh or frozen
- 1 tablespoon olive oil or butter
- 1/2 pound breakfast sausage, bacon, or ham, cooked and chopped
- 1/2 small onion, diced
- 1/2 bell pepper, diced
- 1 to 1 1/2 teaspoons Iron Pier No. 2
- 1/2 cup shredded cheddar, gouda, or Monterey Jack cheese
- 3 to 4 eggs
- Optional: green onions or parsley for topping
Optional Add-Ins
- 1/2 cup mushrooms, sliced
- 1/2 cup leftover roasted vegetables
- 1/4 teaspoon black pepper
- Hot sauce, for serving
Directions
- Heat olive oil or butter in a large skillet over medium heat.
- Add diced potatoes and cook for 10 to 12 minutes, stirring occasionally, until they begin to turn golden and tender.
- Add onion and bell pepper, then cook for another 4 to 5 minutes until softened.
- Stir in cooked sausage, bacon, or ham.
- Sprinkle Iron Pier No. 2 over the skillet and stir until the potatoes and meat are evenly coated.
- Let the hash cook for another 2 to 3 minutes so the edges get crisp and the seasoning warms into the skillet.
- Sprinkle cheese over the hash.
- Make 3 to 4 small wells in the skillet and crack an egg into each well.
- Cover the skillet and cook for 5 to 7 minutes, or until the eggs are cooked to your liking.
- Top with green onions or parsley if desired.
- Serve warm with hot sauce, toast, or extra Iron Pier No. 2 on the side.
Salt Spring Tip
Let the potatoes sit undisturbed for a few minutes at a time while they cook. That is what gives them those golden, crispy edges. Add Iron Pier No. 2 after the potatoes have started browning so the smoky maple flavor warms into the skillet without getting lost.
Serve With
Serve with buttered toast, warm biscuits, fresh fruit, avocado slices, hot sauce, or a simple side of greens for a hearty breakfast, brunch, or breakfast-for-dinner meal.
