Iron Pier Smoky Maple Chicken Thighs

These smoky maple chicken thighs are golden, glossy, and deeply savory with just enough maple sweetness to make the edges sticky. Iron Pier No. 2 seasons the chicken first so the smoky flavor roasts into the skin, then a quick maple glaze goes on near the end for that rich, lacquered finish.

Ingredients

Chicken

  • 6 bone-in, skin-on chicken thighs
  • 1 tablespoon olive oil
  • 1 1/2 to 2 teaspoons Iron Pier No. 2
  • 1 teaspoon Dijon mustard
  • 1 teaspoon apple cider vinegar or lemon juice

Smoky Maple Glaze

  • 2 tablespoons maple syrup
  • 1 tablespoon melted butter
  • 1 teaspoon Dijon mustard
  • 1 teaspoon apple cider vinegar or lemon juice
  • 1/2 teaspoon Iron Pier No. 2
  • Optional: 1 teaspoon Worcestershire sauce for extra savory depth

Optional Sheet Pan Add-Ins

  • Baby potatoes, halved
  • Carrots, cut into chunks
  • Onion wedges
  • Brussels sprouts

Directions

  1. Preheat oven to 425°F.
  2. Pat chicken thighs very dry with paper towels. This helps the skin roast instead of steam.
  3. In a small bowl, stir together olive oil, Iron Pier No. 2, Dijon mustard, and apple cider vinegar or lemon juice.
  4. Rub the mixture all over the chicken thighs, especially over the skin.
  5. Place chicken skin-side up on a sheet pan or in a baking dish. Add vegetables around the chicken if using.
  6. Roast for 25 minutes.
  7. While the chicken roasts, stir together maple syrup, melted butter, Dijon, vinegar or lemon juice, Iron Pier No. 2, and Worcestershire if using.
  8. Brush the glaze over the chicken and return to the oven for 10–15 minutes, or until the chicken is cooked through and the edges are glossy, browned, and sticky.
  9. For extra color, broil for 1–2 minutes at the end, watching closely so the maple glaze does not burn.
  10. Let rest for 5 minutes before serving.

Salt Spring Tip

Add the maple glaze near the end instead of at the beginning. That gives you sticky, glossy edges without burning the sugars before the chicken finishes cooking.
