Lemon Herb Chicken & Rice Bake

This lemon herb chicken and rice bake is cozy, creamy, and bright in all the right ways. Spring House No. 3 brings that comforting poultry-seasoning flavor with a lemon-herb finish, turning a simple baking dish into the kind of dinner that feels homemade, warm, and easy to love.

Ingredients

  • 4 chicken thighs or chicken breasts
  • 1 cup long-grain white rice, uncooked
  • 2 cups chicken broth
  • 1/2 cup heavy cream or half-and-half
  • 1 tablespoon olive oil or melted butter
  • 1 1/2 to 2 teaspoons Spring House No. 3
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest, optional
  • 1/2 cup shredded parmesan, optional
  • Optional: fresh parsley and lemon slices for serving

Directions

  1. Preheat oven to 375°F.
  2. Lightly grease a baking dish.
  3. Add uncooked rice, chicken broth, cream, lemon juice, and half of the Spring House No. 3 to the baking dish. Stir to combine.
  4. Pat the chicken dry, then rub with olive oil or melted butter.
  5. Season the chicken with the remaining Spring House No. 3.
  6. Place the chicken on top of the rice mixture.
  7. Cover tightly with foil and bake for 35 minutes.
  8. Remove foil and bake another 15–20 minutes, or until the rice is tender and the chicken is cooked through.
  9. Let rest for 5–10 minutes before serving so the rice can settle and become creamy.
  10. Finish with lemon zest, parsley, parmesan, or fresh lemon slices if desired.

Salt Spring Tip

Keep the baking dish tightly covered for the first part of cooking so the rice can absorb the broth properly. For extra golden chicken, uncover near the end and let the top roast until the edges look beautifully browned.
