Maple Crusted Pork Tenderloin

Ingredients
- 1 pork tenderloin, about 1 to 1 1/2 pounds
- 1 1/2 tablespoons olive oil
- 1 1/2 to 2 teaspoons Iron Pier No. 2
- 1 tablespoon maple syrup
- 1 tablespoon Dijon mustard
- 1 tablespoon brown sugar, optional for a deeper crust
- 1 tablespoon butter, optional for finishing
- Optional: fresh thyme, parsley, or roasted apples for serving
Directions
- Preheat oven to 400°F.
- Pat the pork tenderloin dry with paper towels.
- In a small bowl, stir together olive oil, maple syrup, Dijon mustard, Iron Pier No. 2, and brown sugar if using.
- Rub the mixture all over the pork tenderloin.
- Heat an oven-safe skillet over medium-high heat and sear the pork for 2–3 minutes per side, until a dark golden crust forms.
- Transfer the skillet to the oven and roast for 12–18 minutes, or until the pork reaches 145°F in the center.
- Remove from the oven and rest for 5–10 minutes before slicing.
- Add a small pat of butter over the warm pork if desired, then slice and serve.
