Maple Smoke Sunday Meatloaf

This is the kind of meatloaf that feels like it belongs in the middle of the table on a chilly Sunday evening. Tender, savory, and brushed with a smoky maple glaze, it brings all the comfort of a classic family dinner with a little extra depth from Iron Pier No. 2.

Ingredients

Meatloaf

  • 1 1/2 pounds ground beef
  • 1/2 cup breadcrumbs
  • 1/3 cup milk
  • 1 egg
  • 1/2 small onion, finely diced
  • 1 tablespoon ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 to 1 1/2 teaspoons Iron Pier No. 2
  • Optional: 1/2 teaspoon black pepper

Maple Smoke Glaze

  • 1/3 cup ketchup
  • 1 tablespoon maple syrup or brown sugar
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon Worcestershire sauce
  • 1/2 teaspoon Iron Pier No. 2

Directions

  1. Preheat oven to 375°F.
  2. In a large bowl, combine breadcrumbs and milk. Let sit for 2 to 3 minutes.
  3. Add ground beef, egg, onion, ketchup, Worcestershire sauce, Iron Pier No. 2, and black pepper if using.
  4. Mix gently until everything is combined, being careful not to overwork the meat.
  5. Shape into a loaf and place in a baking dish or on a lined sheet pan.
  6. In a small bowl, stir together ketchup, maple syrup or brown sugar, Dijon mustard, Worcestershire sauce, and Iron Pier No. 2.
  7. Brush half of the glaze over the meatloaf.
  8. Bake for 35 minutes.
  9. Brush with the remaining glaze and bake for another 15 to 20 minutes, or until the center reaches 160°F.
  10. Let rest for 10 minutes before slicing.

Salt Spring Tip

Letting the meatloaf rest before slicing keeps it tender and helps the smoky maple glaze settle into the top. For extra old-school dinner comfort, spoon a little of the pan juices over each slice before serving.
